Very Tasty BBQ Chicken Stew (Video).

In this video we are going to make some really tasty BBQ chicken stew. This is one way to enjoy your chicken apart from the usual grilling or other methods of stewing it.

This is what you will need…

Get This

  • 1.5kgs chicken portions

  • 1 chicken stock cube

  • 1.5 tsp salt

  • 1 tsp pepper

  • 2 tbsp cooking oil

  • 1 medium onion

  • 3 tomatoes

  • 2 medium carrots

  • 50ml Mr Sauce Lemon Juice

  • 60ml Mr Sauce BBQ Sauce

  • 2 tbsp tomato puree

  • 50ml water

  • Slurry (1 tbsp plain or corn flour + 3 tbsp water)

This is how it will go down, we will start by preparing our chicken. We will be using mixed portions. You are, however, welcome to use any chicken pieces you may have.

We will cut the big ones into sizable portions to better fit into the pot. Next, we will prepare our other ingredients which are tomatoes, onions and carrots. Once all our ingredients are ready we start rolling.

Since we have 1.5kgs of chicken, we are going to approach the initial cooking of the chicken in batches. If you had a big pot, you would possibly fit everything in it all at once…however this is how I approach it. A batch at a time especially at the beginning.

We first fry the chicken to lock in the flavours, a process called searing. Along the way we shall be deglazing our pot using some lemon juice. This is done to heighten the flavours of the dish. Plain water can be used in place of the lemon juice if you have no lemon juice at hand.

Once we have added most of our ingredients and have a stew, we shall also add a slurry.

This is a simple mixture of plain flour or corn flour + water. We use a slurry to thicken the soup without compromising on the flavours of our dish. If you added soup powders, for example, these would bring foreign flavours into the dish which may have not been our intention.

We shall add the slurry whilst stirring at the spot where we are pouring the mixture to avoid lumps forming. This is important to do.

Shortly after adding the slurry and stirring our pot, we shall then add our last ingredient, the carrots, before we let the pot simmer for some 5 minutes only (to avoid loosing the nutrition in the carrots). Taste for seasoning and adjust accordingly. Thereafter we are ready to serve.

Serve hot with your favourite starch as an accompaniment. I have here in mind Sadza (yeah Sadza), rice, potatoes, or bread. If served with rice, a nice salad can also be added to go along with it.

If you add coleslaw salad when serving this dish with rice, you pretty much recreate one of Zimbabwe’s classic wedding dishes 🙂
