Simple Beef Broccoli Stir-Fry

4-5 Servings ~ 20 minutes
  • 350 g super beef steak, cut into strips
  • 3/4 tsp salt
  • 1/2 punnet broccoli
  • 1 large carrot, cut into strips
  • 1 tsp garlic, finely chopped
  • 1/2 tsp ginger, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 3 tbsp oil

So this recipe came about as a result of my ponder on Chinese food. If you appreciate Chinese food you should easily find yourself in no strange territory here.

This will be an excellent meal idea in situations where you are hard-pressed of time. I imagine this to be those week days after a busy and exhausting day.  This recipe is also a great opportunity to appreciate broccoli. I admit that broccoli is a nightmare for some folks especially some children. You have a chance to smuggle it in using this recipe. Furthermore, this is also an opportunity to use colorful broccoli which may interest kids better.

Although you could use budget beef (as alternative to super beef) with this recipe, you are likely to have to deal with the implication of this choice on the time factor. It can be done, yes, it may only call for longer stove time to achieve acceptable tenderness of the meat.

If using budget beef, remove all bones, cut it into strips, season with salt and fry until browned. Add beef stock and bring to the boil then reduce heat and simmer until beef is tender then pick up the recipe from step 2.

Once your dish is ready serve with your preferred starch, gravy and more vegetables if you so wish.

DO THIS

  1. Get your ingredients together. Heat oil in pan. Add the beef strips and season with 1/2 tsp salt. Fry until browned and remove from pan, set aside.
  2. Break up the broccoli into medium-sized florets. Using the same pan, add the broccoli, garlic and ginger. Fry for 2 minutes and add the carrots and 1/4 tsp salt. Fry for a minute.
  3. Return the meat to the pan, add soy sauce and lemon juice. Fry for a further 3 minutes. Taste for seasoning and adjust accordingly.
