Rooibos Chicken Sub

  • 2 french sticks
  • 500g rooibos marinated chicken breast
  • 1 cucumber, sliced
  • 2 tomatoes, sliced
  • salt and pepper to taste
  • 2 tbsp cooking oil
  • mayonnaise (optional)

This chicken sub is super easy to make and tastes delicious! I loved the different textures that you experience with every bite- the crunchy bits from the cucumber, the softness from the French stick and the tenderness from the chicken. All this packed with flavor of course. If you’d like to pack this for your lunch box, cling wrap it first so the filling stays intact.

Equipment

  • Chopping board
  • Sharp knife
  • Bowl
  • Frying pan

 

Instructions

  1. Get your ingredients together. These include; 2 French sticks
    500g rooibos marinated chicken breast
    1 English cucumber, sliced
    2 tomatoes, sliced
    salt and pepper to taste
    2 tbsp cooking oil
    mayonnaise (optional)
  2. Remove the chicken form the marinade and fry until golden brown and set aside.
  3. Slice your French stick in half. Place your green lettuce or purple lettuce, cucumber, tomato and chicken in the middle as the filling. You may drizzle some mayonnaise on top as an extra. This is optional. Enjoy!
