Potato and Carrot Fritters

makes 15-18 Servings ~ 10
  • 2 medium potatoes
  • 1 large carrot, grated
  • 1/4 cup sweet corn1/2 small onion, chopped
  • 1/4 tsp salt
  • 1 egg, beaten
  • 3-4 tbsp plain flour
  • 2 tbsp cooking oil

Everyone welcomes a different yet tasty little something they can enjoy, breaking away from the usual. These potato and carrot fritters are that “little something” you can try out! They are very easy to make a tasty too. You can have these with a cuppa or any other beverage of your preference. They’ll also work well as a lunchbox idea for school and or the office.

Equipment

  • Mixing bowl
  • Non-stick frying pan
  • Sharp knife
  • Chopping board
  • Teaspoon
  • Spatula
  • Grater
  • Tablespoon

 

Instructions

  1. Get your ingredients together. These include; 2 medium potatoes
    1 large carrot, grated
    1/4 cup sweet corn1/2 small onion, chopped
    1/4 tsp salt
    1 egg, beaten
    3-4 tbsp plain flour
    2 tbsp cooking oil
  2. Grate the carrots into a bowl.
  3. Add the rest of the ingredients, in no particular order. Give a quick mix until evenly combined.
  4. Heat oil in pan, spoon 1-2 tablespoons of the mixture into the fan.
  5. Fry until golden brown (about 2 minutes on each side.
  6. Squeeze fresh lemon juice just before serve. Enjoy
