Lemon ‘n Herb Roasted Mixed Veggies

4 - 5 Servings ~ 15-20 minutes
  • 1 medium onion
  • 3 large carrots
  • 1 medium red pepper
  • 1 medium green pepper
  • 1 medium yellow pepper
  • 5 baby marrow
  • 1/2 cup broccoli

It’s a new year, new goals and possibly new diets for some! If one of your goals this year is to eat more vegetables or if you traditionally begin the year by eating vegetables then I’ve got your back. This right here is a simple and flavourful dish that you can even fix with your eyes closed. Even if you love your meat, this dish will be great for meat lovers too! You can have it as a side dish with your preferred starch, gravy and meat or just the roasted veg with your preferred protein.

I’ve been on a ride with the Mr Sauce Marinades range the past couple of weeks. It all started with the Smokey BBQ Marinade which I used on pork belly, and it was just amazing, this has to be my favourite of the range! That smokey flavour is everything! Then came the Peri-Peri Marinade which I used on some Beef Short Ribs, they were delicious, just the right amount of heat right up my alley!

Mr Sauce Marinades
Next up is the lemon & herb marinade which I used in this recipe to turn some simple veggies into a tasty dish. Lemon & herb is one of my all time favourite flavour combinations. I love how the Mr Sauce marinade smells when you take a sniff at it. It most definitely did add some great flavour to the vegetables. If I were to ask of something from Mr Sauce, it would be that a little more lemon flavour be added to the marinade. I can smell it during the cooking but only taste it from a far distance when it comes down to eating. That aside, I’d say it’s a pretty good marinade. As has been said by some here in Zim, it adds “ka that” to your dishes, so go ahead and “Add Some”!

PS: when marinating vegetables, you have to be really careful on the timing. Not more than 15 min will be perfect. Leaving them in the marinade for too long may lead to them becoming limp and mushy just as they turn limp if kept in salad dressing for too long (esp in the case of leafy greens).
So let’s get cooking…

Do This

  1. Get your ingredients together. Cut your veggies into chunky pieces and put in a bowl. Add the Mr Sauce Lemon & Herb Marinade, enough to just coat your veggies.
  2. Give a quick toss or mix gently then season with salt and add a drizzle of oil and give another gentle mix.
  3. Cover the bowl and let this marinate for not more than 15 min. Preheat oven to 180 degrees Celsius. Line your oven tray with foil paper or just lightly grease  the oven tray if you’re not using foil.
  4. Add the veggies and roast for about 15 – 20 min or until the veggies are done. Taste for seasoning and adjust accordingly. Enjoy!

You can try this marinade on any mixed veggies of your preference! You can also stir-fry them instead if you so wish.
