Fried Rice with Mince & Veggie Mix

4-5 Servings ~ 30 minutes
  • 4 cups cooked rice
  • 300 g steak mince
  • 1/2 onion, chopped
  • 1/2 green pepper, chopped
  • 2 medium carrots, chopped
  • 1 medium potato, chopped
  • 1/2 medium tomato, chopped
  • 1/2 tsp salt
  • 1 tbsp tomato paste
  • 1/2 tsp curry powder
  • 3 tbsp oil

Often times when cooking you inevitably start accumulating left-overs of sorts. This could be out of cooking more than what is required, people leaving behind in serving dishes some food and so on. This is particularly common with starches such as rice, I find. What could you possibly do with left-over rice portions accumulated over days or weeks and now crowding out other items in the fridge?

So this here is one recipe that can help you efficiently and scrumptiously utilize left-overs. Not only will it cure the rice left-overs problem in just 30 minutes, but it is also great for those two carrots left in the fridge, half a pepper, and what not.

Although a left-overs’ recipe idea, nothing should stop you from going ahead and preparing this recipe from scratch… I mean cooking fresh rice and meat for the purpose of this recipe. Be my guest. Furthermore, it is also a super suitable budget meal idea when you want your meal to go further. These days, in our Zim context, not few of us welcome meals that go further!

DO THIS

  1. Get your ingredients together. Heat oil in pan. Add mince, potatoes and salt. Fry until browned.
  2.  Add onion and curry powder. Fry for 2 minutes. Add tomatoes and tomato paste. Allow cooking for 3 minutes.
  3.  Add carrots and peppers. Fry for 3 minutes then add the rice. Mix until all ingredients are evenly incorporated. Taste for seasoning and adjust accordingly. Enjoy!
