Easy Sunnyside breakfast (with sauteed onion and tomato)

  • 1 egg
  • 1 small tomato
  • 1/4 small onion
  • 1/4 of medium yellow pepper
  • Oil fo frying

As you may already know after hearing this time and again; Breakfast is the most important meal of the day. It also happens to be my favourite too! This here is a pretty quick breakfast which will give you some protein (from the egg), vitamins (from the tomato, yellow pepper and onion) and carbs (from the bread). It works well for the busy weekdays where you may not have time to prepare a full English breakfast 🙂

Quick Instructions

  1. Cut your yellow pepper (1/4 of a medium yellow pepper) into julienne strips and your tomato (1 small tomato) and regular onion or sweet onion (1/4 small onion) into rings. Heat oil in pan, Break the egg into the pan. Scoop some of the hot oil onto the egg yolk so it gets done.  When egg is done, place of greaseproof paper. Immediately add the onion, tomato and peppers. Sauté for 1 minute. Your breakfast is ready! Season with salt and pepper.

Cut your yellow pepper into julienne strips and your tomato and onion into rings (a). Heat oil in pan (b), Break the egg into the pan. Scoop some of the hot oil onto the egg yolk so it gets done (c). When egg is done, place of greaseproof paper. Immediately add the onion, tomato and peppers. Saute for 1 minute (d). Your breakfast is ready! Season with salt and pepper.
